Our baking students made and decorated wedding cakes last week--here's a few to check out. Some of them have NEVER done this before, and did a great job! Thought I'd prefer fresh flowers for my cake, they used sugar paste and make them on styrofoam so they could be kept for displays. One of them used a really pretty strand of porcelain flowers and crystals that she bought at Michael's, I was thinking of buying some to use for my cake and cake table. Anyway, thought it may generate some ideas for some of you!

I am really impressed. They all look fantastic. Are they made with fondant or butter creame? Can they be made with butter cream? Are they in professional culinary schools? Can I steal one of the ideas for my wedding?

those cakes are amazing I wish I was taught that when I went to cooking school.

These are all fondant but any decent bakery should be able to replicate most of this with buttercream--and they would be THRILLED if they knew that someone liked their cake so much that they copied it for their wedding!
Their instructor used to own a cake shop in Michigan, and does amazing work!
Dawn, where did you go to school? At ours, they only get cake decorating in the patisserie program, not in culinary arts. I'm going to audit the class next spring.

Wow those kids are talented and it's styrofoam? It's kind of hard to tell. They look delicious!

Those are beautiful cakes...I really like the 4th one.....would go good with my beach theme. Thanks for sharing.

Liarliarz: these were made by students in the Le Cordon Bleu patisserie & baking program in Orlando, FL. Their ideas are open to borrow!
They do make real (and really delicious) cakes, too, these were for their final exam in cake decorating. I'm really proud of how well this group did!

would they be interested in being hired to make these ladies a wedding cake of their dreams? maybe to add to their portfolios for the future?

Well, you can tell whom ever made the fourth one that I am stealing that one for my wedding. I just love it. :D

Sandi, I'll let her know, she'll be tickled! And if anyone is in the area and wants to get their wedding cake through one of them, let me know. We have a couple of students and instructors that do this on the side so it's cheaper than paying a specialty baker. Last year, we had a small reception in our student restaurant and the instructor did a cake as a demo and only charged the bride for the crystal flowers on top!
